Store in airtight container that protects it from light and humidity, and away from strong-smelling foods and cleaning products that might contaminate it. The original packaging that the different Mate's come in are made of compound that make an excellent barrier - just make sure the bag is folded down, and maybe put a rubber band around it for good measure.
